Coffee biscuits with chocolate: a delicious recipe

Get ready to bake!

The following recipe is just so quick and easy and indeed requires only a few ingredients, most of which, as you are about to discover, you already have in your kitchen! First, we will make use of instant espresso coffee, so make sure you have it to hand.

Many of you already love the combination of coffee and chocolate, as the former seems to intensify the intense flavour of the latter. In matters of chocolate, we suggest adding 100 grams of semi-sweet chocolate chips in case you want to go for a plain cookie, or just add in more of it, maybe together with some chopped, whether you are up to try something stronger. One thing you have to keep in mind, is as you bake these cookies your house will smell so delicious, just as it happens when you prepare your homemade cookies, though with an additional inviting scent of freshly brewed coffee.

The ingredients

Here are the ingredients you need to bake your tasty coffee and chocolate biscuits - make sure to put them in small bowls right before starting to prepare them!

  • 180g all-purpose flour
  • 150g butter
  • 1 egg
  • 250g granulated sugar
  • ½ tsp baking soda
  • ½ tsp salt
  • 2.8 fl oz instant espresso coffee
  • 100g chocolate chips
  • 2 tsp vanilla extract
  • Warm water

Preparation

  • Preheat the oven to 180° Celsius and line it with a large baking sheet with parchment paper.
  • Whisk together the flour, baking soda and salt in a medium bowl, then set it aside.
  • Stir together the instant espresso powder and the warm water in a small bowl until your coffee completely dissolves.
  • Mix the butter, sugar, egg and vanilla extract by using a stand mixer or hand mixer on low speed until fully are combined. Mix in both your coffee mixture and the flour mixture until combined.
  • Gently fold in the chocolate chips, then spoon the biscuit dough onto the prepared cookie sheet in one heaping tablespoon Space at least an inch apart!
  • Place into the oven and let the cookies bake for 10 to 12 minutes until you see the edges are set and your cookies get soft and puffy.
  • Churn out the biscuits from the oven, then allow them to cool for at least five minutes before removing.
  • Serve your delightful cookies warm or once they have cooled completely at leisure!

Additional tips

We suggest using semisweet chocolate chips or a chopped chocolate bar as an alternative. If you go for some chopped chocolate, it will melt in your biscuits making them taste very chewy and fudgy.

You must be careful not to overbake your cookies: they will be pretty soft once you remove them from the oven but will rapidly get crispy as they cool down.

Furthermore, remember your cookies can also be frozen and baked later!
