The ingredients for this easy coffee cake recipe can be found in any supermarket, but we recommend using our Qualità Oro for the perfect taste. Equipment

  • 2 x Mixing bowls

  • Electric whisk

  • 9-inch cake mould

  • Sieve or mesh strainer

Ingredients

  • 3 eggs

  • 310g all-purpose flour

  • 220g granulated sugar

  • 2 tbsp of icing sugar

  • 115ml cup of vegetable oil

  • 100ml milk

  • 100ml Lavazza Qualità Oro “Sinfonia Perfetta” coffee

  • 4 tsp of baking powder

Steps

  1. Preheat your oven to 175°C (350°F) and take out your mixing bowl.
  2. Crack the 3 eggs into the mixing bowl. Then, add the granulated sugar to the eggs. Mix the two ingredients using an electric whisk and slowly pour the milk and vegetable oil into the mixture.
  3. Sift the all-purpose flour with a sieve into another bowl, for a smooth cafe cake texture. Then, take the electric whisk out of the batter.
  4. Gradually add the sifted flour into the wet mixture and stir until there are no lumps in the batter. After everything is well mixed, add the baking powder.
  5. Pour the brewed Qualità Oro Sinfonia Perfetta blend into the batter. Combine the ingredients and mix evenly.
  6. Prepare the mould by coating the surface with butter, then add a thin and even layer of flour. If you coat the mould, your cake won’t stick – so you can take it out without ruining the shape. Then pour the batter into the mould.
  7. Put the cake tin into the centre of your oven and let it bake for 60 minutes.
  8. After 60 minutes, use a knife or a fork to check your cake. If there isn’t any wet batter sticking to the knife, you can take it out of the oven. If there’s a trace of wet batter, let it bake for several minutes longer before checking again.
  9. Let your freshly baked coffee flavoured cake rest and cool at room temperature for a few minutes, before opening the mould.
  10. Transfer it to a plate and serve! You can decorate your espresso cake and add sweetness with icing sugar.
